Green Eggs and Ham, Dr. Seuss’ birthday launch focus on reading

It’s been a quarter of a century, and Beaches Restaurant and Bar owner Mark Matthias keeps coming back to the same verdant dish: green eggs and ham.

Vancouver Public Schools acknowledged the National Education Association’s Read Across America Day on Monday by dishing up scrambled eggs to elementary school students across the district.

Matthias, who has run the program at schools for 25 years, will travel with a team of volunteers to schools across the county this week to take part in the annual tradition.

The neon-green and porcine dish is a call to “Green Eggs and Ham,” one of the best known books by beloved children’s book author Dr. Seuss, or Theodor Seuss Geisel. March 2 is also Dr. Seuss’ birthday.

Students donned the characteristic striped hats of “The Cat in the Hat,” while Matthias sported orange sneakers decorated with the “Green Eggs and Ham” cover. Schools will also send students home with books of their own this week, donated by community partners.
